This Raw Mango curry is the most delicious thing to come out of the Konkan coast since Deepika Padukone! Enjoy this meal with rice, rotiyan or bread!RAW MANGO CURRYIngredients4 raw mangoes, peeled cut into wedges2 tablespoons oil1 teaspoon mustard seeds1 teaspoon cumin seeds10 curry leaves2-3 green cardamoms 1 inch cinnamon stick1 medium onion, chopped1 teaspoon turmeric powder1 teaspoon red chilli powder1 teaspoon curry powder1 teaspoon ginger-garlic paste½ cup scraped fresh coconut1 tablespoon roasted coriander seeds2-3 dried red chillies1 teaspoon brown sugarSalt to tasteMethod1. Heat oil in a non-stick pan, add mustard seeds and cumin seeds and let them splutter. Add curry leaves, green cardamoms and cinnamon and mix.Add onion and sauté till golden.2. Add turmeric powder, red chilli powder and curry powder and mix well. Add ginger-garlic paste and sauté till the raw aroma is gone.3. Add mango and mix. Add about half a cup of water, reduce heat and cook on medium heat for three to fourminutes.4. Put coconut, coriander seeds and red chillies in a mixer jar and grind to a smooth paste with a little water.5. Add ground paste to the curry and mix well.Add brown sugar and salt and mix well.Continue cooking for a minute.6.
