When raw mangoes in season you can prepare this lovely dish which has a unique South Indian flavor.Ingredient Raw mango peeled and grated 1 smallDried Red chilli 6 no.Rice cooked 6 cupsRoasted peanuts ¼ cupCoconut scraped ½ cupDried red chillies 6 no.Turmeric powder 1 tspMustard seeds 1 tspCumin seeds 1 tspAsafoetida ¼ tspCurry leaves 10-12 nosSalt to tasteGhee 1 tbspChopped coriander 2 tspMethod:1. Heat ghee in a pan, add dry red chilies, asafetida, mustard seeds, cumin seeds, sauté till mustard seeds splutter. 2. Add curry leaves , roasted peanuts, coconut, raw mango, turmeric powder, salt, and mix well.3. Add cooked rice and mix well. Cook for 2 mins.4. Add fresh coriander and mix well.5. Remove in a serving bowl and garnish with coriander sprig.6. Serve hot.
