Ingredients:

500 gm Potatoes
2 Tomatoes
2 tsp. Ginger-Green Chili paste
½ tsp. Cumin
½ tsp. Mustard seeds
1 tsp. Coriander powder
½ tsp. Turmeric
1 tsp. Red Chili powder
1 tsp. Garam Masala
8-10 Curry leaves
1 tsp. Sugar
2 tsp. Oil
1 cup Water
Salt to taste

Method:

1. Wash the potatoes and chop them into medium sized cubes.

2. In a frying pan, pour the oil, and add the mustard seeds, cumin and ginger-chili paste.

3. Add the chopped potatoes to this mixture.

4. Cover the pan with a lid and cook for 3-4 minutes.

5. Then add finely chopped tomatoes, all dry masalas and one cup of water.

6. Cover the pan and cook again for 10-15 minutes.

7. Garnish with coriander.
