Rajma Roti Sandwich | राजमा रोटी सॅन्डविच | Chef Anupa | Khane Deewane | Sanjeev Kapoor Khazana

As the name suggests, roti sandwich made with a flavourful rajma stuffing along with gooey cheese and toasted till crisp! A kid’s favourite for sure!

RAJMA ROTI SANDWICH

Ingredients

1 cup kidney beans (rajma), soaked overnight and boiled
8 whole wheat flour rotis
1 tbsp oil + for basting
1 tbsp chopped garlic
1 tsp red chilli flakes
1 tsp dried mixed herbs
Salt to taste
¼ cup kidney bean stock
2 tbsps tomato ketchup
1 medium onion, sliced
½ cup mixed bell pepper strips
Grated processed cheese as required
Grated mozzarella cheese as required

Method

1. Heat 1 tbsp oil in a non-stick pan. Add garlic and sauté for 30 seconds. Add red chilli flakes and dried mixed herbs and mix.
2. Add kidney beans and toss. Add salt and kidney bean stock, mix, lightly mash and cook for 2-3 minutes. Add tomato ketchup and mix.
3. Heat a non-stick tawa.
4. Add onion and mixed bell pepper strips to kidney beans mixture and mix.
5. Place 4 rotis on the hot non-stick tawa and spread some kidney bean mixture, processed cheese and mozzarella cheese on top. Cover with remaining rotis, lightly press and roast from both sides till golden, basting with some oil.
6. Cut into wedges and serve hot.
