A great kebab recipe for all the vegetarian lovers. Extremely flavorful and mouth watering rajma kebab wrapped into a roll is a perfect dish if you are looking for something healthy and tasty!

RAJMA GALOUTI KABAB ROLL

Ingredients

2½ cups boiled kidney beans (rajma)
4 ready-made refined flour rotis
1 tbsp + 2 tsps oil + for drizzling
2 tsps caraway seeds
2 tbsps chironji
1 tbsp chopped garlic
1 inch ginger, chopped
1-2 green chillies, chopped
8-10 cashew nuts, halved
1 large onion, finely chopped
Crushed black peppercorns to taste
¾ cup fried onions
Salt to taste
2 tbsps roasted Bengal gram powder
½ tsp green cardamom powder
10-15 fresh mint leaves
½ cup grated khoya/mawa
1 tbsp Tata Sampann Garam Masala
Green chutney for applying + to serve
Onion slices for sprinkling + to serve
1 lemon
Chopped fresh coriander leaves for sprinkling

Method

1. Heat 1 tbsp oil in a non-stick wok, add caraway seeds and chironji and sauté till fragrant.
2. Add garlic, ginger, green chillies and cashew nuts and sauté for 1-2 minutes.
3. Add onion and crushed black peppercorns and sauté for 1-2 minutes.
4. Add fried onions and mix and sauté for 1-2 minutes. Add salt, roasted Bengal gram powder, green cardamom powder and mint leaves and mix well.
5. Add khoya and Tata Sampann Garam Masala and mix well. Add kidney beans and mix. Cook for a minute and take the pan off the heat and allow to cool slightly.
6. Transfer this mixture into a grinder jar and grind to a coarse paste. Put this in a bowl and divide the mixture into equal portions and shape each portion into a ball and slightly flatten to shape into a kebab.
7. Heat remaining oil in a non-stick tawa, place the kebabs at an equal distance on it and cook on low heat for 1-2 minutes on each side or till golden brown. Drain on a plate.
8. To make one roll, place refined flour roti on the same tawa and drizzle oil on the sides. Cook for 1-2 minutes, flip and apply a little green chutney and place 2 kebabs and press them lightly.
9. Sprinkle onion slices, squeeze juice of ¼ lemon and sprinkle chopped coriander. Roll and place it on a serving plate.
10. Serve hot onion slices and green chutney.
