Quick and easy one pot chicken pulao served with walnut beetroot raita

QUICK CHICKEN PULAO

Ingredients

400 grams boneless chicken, cut into ½ inch pieces
1½ cups Basmati rice, soaked for 30 minutes
½ cup yogurt
1 tablespoon ginger-garlic paste
Salt to taste
2 tablespoons ghee
1 teaspoon cumin seeds (jeera)
5-6 cloves
1 bay leaf
1 inch cinnamon
4 green cardamoms
2 medium onions, sliced
1½ teaspoons red chilli powder
3 cups chicken stock
Raita for serving

Method

1. Mix together chicken pieces, ginger-garlic paste, yogurt and salt in a bowl. Refrigerate to marinate for 1 hour.
2. Heat ghee in a deep non-stick pan. Add cumin seeds and when it changes colour, add cloves, bay leaf, cinnamon and green cardamoms and sauté till fragrant.
3. Add onions and sauté on high heat till golden brown. Add chilli powder and sauté well.
4. Add chicken alongwith the marinade, mix and cook on high heat for 2-3 minutes or till half done.
5. Drain rice and add to chicken mixture and mix well. Adjust salt and add chicken stock, mix, cover and cook on medium heat till the rice is done.
6. Serve hot with raita.
