Quick and easy one pot chicken pulao served with walnut beetroot raita .QUICK CHICKEN PULAOIngredients400 grams boneless chicken, cut into ½ inch pieces1½ cups Basmati rice, soaked for 30 minutes½ cup yogurt1 tablespoon ginger-garlic pasteSalt to taste2 tablespoons ghee1 teaspoon cumin seeds (jeera)5-6 cloves1 bay leaf1 inch cinnamon4 green cardamoms2 medium onions, sliced1½ teaspoons red chilli powder3 cups chicken stockRaita for servingMethod1. Mix together chicken pieces, ginger-garlic paste, yogurt and salt in a bowl. Refrigerate to marinate for 1 hour. 2. Heat ghee in a deep non-stick pan. Add cumin seeds and when it changes colour, add cloves, bay leaf, cinnamon and green cardamoms and sauté till fragrant.3. Add onions and sauté on high heat till golden brown. Add chilli powder and sauté well. 4. Add chicken alongwith the marinade, mix and cook on high heat for 2-3 minutes or till half done.5. Drain rice and add to chicken mixture and mix well. Adjust salt and add chicken stock, mix, cover and cook on medium heat till the rice is done. 6.
