QORMA

Ingredients

¼ cup oil
3 large onions, sliced
Salt to taste
1½ tbsps garlic paste
1 tbsp ginger paste
½ tsp turmeric powder
1 kilogram mutton on the bone, cut into 2 inch pieces
10-12 prunes
1½ tsps black pepper powder
Ginger strips for garnish
Coriander sprig for garnish
Lemon wedge to serve

Method

1. Heat oil in a deep pan, add onions and sprinkle a little salt. Sauté till golden brown. Add garlic paste, ginger paste and mix well. Cook for 1 minute.
2. Add turmeric powder and mix. Add mutton and mix, add salt and sauté for 4-5 minutes. Add 3 cups water and mix well.
3. Let the mixture come to a boil, cover and cook till the mutton is cooked completely.
4. Add prunes and mix. Add 1½ cups water, mix well and allow the mixture to come to a boil. Add black pepper powder, mix, cover and cook for 10-15 minutes. Take it off the heat.
5. Transfer into a serving bowl, garnish with ginger strips, coriander sprig and serve hot with lemon wedge.
