Crisp mathris prepared with onions to turn your chai times better!PYAAZ KI MATHRIIngredients1 medium onion, chopped1½ cups refined flour2 tbsps whole wheat flour2 tbsps gram flour (besan)2 tbsps semolina2 tsps cumin seeds¼ tsp carom seeds (ajwain)A pinch of asafoetida2 tsps dried fenugreek leaves (kasuri methi)Salt to taste3 tbsps hot gheeOil for deep fryingMethod1. Take refined flour in a bowl. Add whole wheat flour, gram flour, semolina, cumin seeds, carom seeds, asafoetida, dried fenugreek leaves, salt, onion, ghee and mix well.2. Add ¾ cup water and knead to stiff dough.3. Cover with a moist muslin cloth and set aside for 10-15 minutes.4. Divide the dough into equal portion and roll into balls. Flatten to make mathris.5. Heat sufficient oil in a kadai and slide the mathris in oil. Deep fry on medium heat till golden brown and crisp.6. Drain on absorbent paper and allow to cool.7.
