Crisp mathris prepared with onions to turn your chai times better!

PYAAZ KI MATHRI

Ingredients

1 medium onion, chopped
1½ cups refined flour
2 tbsps whole wheat flour
2 tbsps gram flour (besan)
2 tbsps semolina
2 tsps cumin seeds
¼ tsp carom seeds (ajwain)
A pinch of asafoetida
2 tsps dried fenugreek leaves (kasuri methi)
Salt to taste
3 tbsps hot ghee
Oil for deep frying

Method

1. Take refined flour in a bowl. Add whole wheat flour, gram flour, semolina, cumin seeds, carom seeds, asafoetida, dried fenugreek leaves, salt, onion, ghee and mix well.
2. Add ¾ cup water and knead to stiff dough.
3. Cover with a moist muslin cloth and set aside for 10-15 minutes.
4. Divide the dough into equal portion and roll into balls. Flatten to make mathris.
5. Heat sufficient oil in a kadai and slide the mathris in oil. Deep fry on medium heat till golden brown and crisp.
6. Drain on absorbent paper and allow to cool.
7. Serve.
