DOUBLE MASALA CHICKEN
Preparation time 10 minutes
Cooking time 25-30 minutes
Serve 2-4

Ingredients
For Chicken Marination
1 tbsp Tender Coriander stems (finely chopped)
inch Ginger (peeled & roughly chopped)
4 no. Green chillies (less spicy & roughly chopped)
1 cups Curd, beaten,
900 gms Chicken (thigh with bone & drumstick)
Salt to taste,
1 tbsp Oil,
1 heaped tbsp Coriander powder,
1 tsp Turmeric powder,

For Chicken Double Masala
2-3 tbsp Ghee,
Marinated chicken,
cup Water,
2 tbsp fresh Coriander leaves, finely chopped,
1 tsp fresh Mint leaves, finely chopped,
Prepared Onion Tomato Masala,
1 tsp dry Fenugreek leaves, crushed,
tsp Garam masala powder,

For Onion Tomato Masala
1 tbsp Ghee,
2-3 tbsp Mustard oil,
8-10 no. Black peppercorns,
inch Cinnamon stick,
2 no. Bay leaf,
3 no. medium Onions, chopped,
1 tbsp Degi red chili powder,
1 tsp Coriander powder,
tsp Turmeric powder,
3 no. medium Tomatoes, roughly chopped,
cup Water,
Salt to taste,

For Garnish
Coriander sprig,
Lemon wedge,

Process
For Chicken Marination
In a bowl, add tender coriander stems, ginger, green chillies, curd, chicken, salt to taste, oil, coriander powder, turmeric powder and mix it well.
Keep it aside to marinate for a while.

For Chicken Double Masala
In a handi, add ghee, once it's hot, add marinated chicken and saute it for 2-4 minutes.
Add water and let it cook for a while.
Add fresh coriander leaves, mint leaves and mix it well.
Add prepared onion tomato masala and give it a good mix.
Cover it with a lid and cook it for 5-6 minutes until cooked well.
Finish it with some dry fenugreek leaves, garam masala and mix it well.
Transfer it to a serving dish, garnish it with coriander sprig and lemon wedges.
Serve hot with roti.

For Onion Tomato Masala
In a kadai, add ghee, mustard oil, once it's hot, add black peppercorns, cinnamon stick, bay leaves and let it splutter.
Add onion and saute it until golden in color.
Add degi red chili powder, coriander powder, turmeric powder and saute it for a minute.
Add tomato, water, salt to taste and cook it for a while on medium flames.
Keep it aside for further use.
