മത്തങ്ങ പുളിങ്കറി - #Pumpkin with Coconut and #Tamrind Gravy

Pumpkin-1/2kg
Coconut-1/2 cup
Onion-1(sliced)
Green chilly-4-5
Dried chilly-7-8
Coriander seeds-1tbsp
Fenugreek seeds-1/2tsp
Tamarind - a small
gooseberry sized
Turmeric - 1/2tsp
Sesame oil- 2-3tbsp
Mustard - 1/2tsp
Shallots - 2-3sliced
Curry leaves - few
Salt-To taste

Method
Heat a pan and dry fry the dried chilly 5-6, coriander seeds, Fenugreek seeds.
Let it turn to a golden colour, then add the coconut and saute for about 2 minutes and turn off. Once it cools, grind it with tamarind and make a fine paste out of it.
Cook the pumpkin by adding enough water, sliced onion, green chilly
and turmeric, till it cooks well.
After that add the grounded mixture and salt to it and cook further untill the pumpkin mashes a bit and the gravy thickness.
Heavy oil in a pan and splutter mustard seeds, Shallots, dried chilly and curry leaves and fry for few seconds and pour it into the curry and close the lid for 5mins and then its ready to be served with hot rice
