Pumpkin Spiced Madelines | Sanjeev Kapoor Khazana

PUMPKIN SPICED MADELINES

Ingredients

3 tablespoons pumpkin puree
½ teaspoon clove powder
½ teaspoon cinnamon powder
½ cup refined flour
2 eggs
⅓ cup castor sugar
1 teaspoon baking powder
¼ cup melted butter
Icing sugar for dusting

Method

1. Preheat oven at 180° C.
2. Break eggs in a bowl. Add castor sugar and beat well.
3. Add clove powder, cinnamon powder and pumpkin puree and beat again.
4. Add flour and baking powder and fold well. Add butter and mix well. Transfer the mixture into a piping bag.
5. Pipe the mixture in a silicon madeline mould, tap a little, put in the preheated oven and bake for 8-10 minutes. Remove from heat, cool and demould.
6. Dust icing sugar and serve.
