Pumpkin & Kesar Soup Chef Harpal Singh Sokhi

#Pumpkinkesarsoup is s delicious and healthy soup smooth like silk prepared with pumpkin flavored with garlic, mixed herbs, sprinkled with saffron.

Ingredients Quantity
Oil 1 tbsp
Butter 2 cubes
Bay leaf 1 no
Garlic chopped 5 - 6 cloves
Onion chopped 1 no
Red pumpkin (cube) 250 gm
Potatoes Boiled 1 no
Salt to taste
Black pepper 1 tsp
Water as required
Mix herbs 1 tsp
Chilli flakes 1 tsp
Parsley Chopped 1 tsp
Fresh cream 1 tbsp
Saffron a pinch

Method:-
1. In the pressure cooker add oil, butter, bay leaf, garlic and Saut for 1 to 2 minutes.
2. Add chopped onion and saut for 1 minute. Add red pumpkin, boiled potatoes and mash it, add salt to taste, black pepper, and water mix it well close the lid of pressure cooker. Make about 6 whistles, cook In 15 minutes.
3. Take a kadai, strain and mash the pumpkin mixture and place it back on heat.
4. Add butter, mix herbs, chilli flakes, mix and allow it to gently boil.
5. Add the fresh cream mix it well, Take a little saffron and crush it and put in soup. Add little parsley.
6. Transfer the soup into a bowl and garnish with saffron, parsley and some fresh cream.
