PROTEIN SOUP
As the name suggests, this is a fully protein loaded soup that is not only nutritious and healthy but very tasty as well.

Ingredients

1 cup Tata Sampann Green Moong
½ small bottle gourd, unpeeled
2 green chillies
Salt to taste
¼ tsp turmeric powder
½ tsp lemon juice
1 tbsp butter
¼ cup chopped baby corn
¼ cup sweet corn kernel, boiled
8-10 broccoli florets, blanch
¼ cup chopped tofu, cut into ½ inch cube
Crushed black pepper powder to taste
1 tbsp fresh cream + for drizzling

Method

1. Wash and Soak Tata Sampann Green Moong with sufficient water for 1 hour.
2. Heat pressure cooker, add soaked Tata Sampann Green Moong. Finely chop bottle gourd and add into the cooker. Add green chillies and 2 cups water, cover and cook till 3 whistles are given out.
3. Open the cooker once the pressure has reduced completely and allow the mixture to cool slightly. Transfer this into a blender jar and blend into a smooth paste.
4. Strain the ground paste into a non-stick deep pan, place the pan on heat and add 1 cup water and mix.
5. Add salt and turmeric powder and mix. Let the mixture come to a boil. Add lemon juice and cook for 1-2 minutes.
6. For the tossed vegetables, heat butter in a non-stick pan, add baby corn, sweet corn, broccoli, and sauté for 1 minute. Add tofu and crushed black pepper powder and mix well.
7. Add fresh cream in the soup, mix and take the pan off the heat. Transfer the soup into serving bowl.
8. Drizzle fresh cream on top and garnish with tossed vegetables, serve hot.
