PROTEIN SOUPAs the name suggests, this is a fully protein loaded soup that is not only nutritious and healthy but very tasty as well.Ingredients1 cup Tata Sampann Green Moong½ small bottle gourd, unpeeled2 green chillies Salt to taste¼ tsp turmeric powder½ tsp lemon juice1 tbsp butter¼ cup chopped baby corn ¼ cup sweet corn kernel, boiled8-10 broccoli florets, blanch¼ cup chopped tofu, cut into ½ inch cubeCrushed black pepper powder to taste1 tbsp fresh cream + for drizzling Method1. Wash and Soak Tata Sampann Green Moong with sufficient water for 1 hour.2. Heat pressure cooker, add soaked Tata Sampann Green Moong. Finely chop bottle gourd and add into the cooker. Add green chillies and 2 cups water, cover and cook till 3 whistles are given out. 3. Open the cooker once the pressure has reduced completely and allow the mixture to cool slightly. Transfer this into a blender jar and blend into a smooth paste.4. Strain the ground paste into a non-stick deep pan, place the pan on heat and add 1 cup water and mix. 5. Add salt and turmeric powder and mix. Let the mixture come to a boil. Add lemon juice and cook for 1-2 minutes.6. For the tossed vegetables, heat butter in a non-stick pan, add baby corn, sweet corn, broccoli, and sauté for 1 minute. Add tofu and crushed black pepper powder and mix well. 7. Add fresh cream in the soup, mix and take the pan off the heat. Transfer the soup into serving bowl.8.
