Pressure Cooker Gajar Halwa Carrot Halwa Sanjeev Kapoor Khazana

Really tender and delicious. The way you get the halwa when cooked in pressure cooker is amazing.

PRESSURE COOKER GAJAR HALWA

Ingredients

1 kilogram red carrots, peeled and grated
cup ghee
10-12 cashew nuts, vertically halved
8-9 almonds, slivered
6-7 pistachios, slivered
1 cups milk
1 cup sugar
tsp green cardamom powder
10-12 pishori pistachios, blanched, peeled and slivered + for garnish
Silver varq for garnish

Method

1. Heat ghee in a pressure cooker. Add cashew nuts, almonds, pistachios and saut for a minute.
2. Add carrots and saut for 2-3 minutes.
3. Stir in the milk, cover and cook under pressure on medium heat for 3 whistles.
4. Open the cooker once the pressure has reduced completely. Place the cooker back on heat, add sugar and green cardamom powder and mix well. Cook till the mixture thickens.
5. Add pishori pistachios and mix well. Transfer into a serving bowl, garnish with pishori pistachios and silver varq.
