Spread the love! :)Ingredients:Salad Ingredients: Prawns medium Sized with tail - 6 Orange juice 100ml Garlic 2 cloves Thyme 2 springs Know Stock Cube 1 Mayonnaise - 100g Heinz Ketchup 30g Tabasco - 2 tsp Worcestershire sauce 1/2 tbsp Diced Mango 1/2 Thai chilli 1/2 diced pineapple 100g basil leaves 4g cumin powder 3g chaat masala 3g rocket leaves 10g micro greens to garnish lemon 1 crushed ice to serveMethod:Mix in the mayo, ketchup , worcestershire & tabasco. Set aside. De-shell the prawns keeping the tail intact. De-vein the prawns with a small incision. Make a little bit of stock with the cube and add the orange juice to add. Add the thyme and garlic & bring to boil. Slightly over season & pour over the prawns to steep. Once cooked, chill the prawns in the juice. Mixed in the mango & pineapple with the spices and refrigerate. place some crushed ice on a bowl. Place another shallow bowl on top of it. Spread the salsa on the bowl place the prawns over it and spoon the cocktail sauce over it. Spread some rocket around and serve.
