Amp up your starter menu with this fancy dish. Prawn mixture skewered on sugarcane sticks and shallow fried to perfection!

PRAWNS ON SUGARCANE STICK

Ingredients

20-25 medium prawns, cleaned and deveined
6-8 sugarcane stick, 2 inch each
1 tbsp finely chopped garlic
1 tbsp finely chopped ginger
1 medium onion, finely chopped
½ tsp red chilli flakes
1 tbsp chopped fresh coriander leaves
½ tsp fish sauce
Salt to taste
¼ cup bread crumbs
White sesame seeds for coating
2-3 tbsps oil
Sweet chilli sauce to serve

Method

1. Put the prawns in a blender jar. Blend to a fine paste and transfer it into a bowl.
2. Add garlic, ginger, onion, red chilli flakes, coriander leaves, fish sauce, salt and bread crumbs and mix well.
3. Apply some water on your palms and take a portion of the prawns mixture and pat it on the sugarcane stick.
4. Spread the sesame seeds on a plate. Roll the prawns mixture over it.
5. Heat oil in a non-stick shallow pan. Place the prawns on stick and cook for 2-3 minutes on each side. Drain on an absorbent paper.
6. Serve hot with sweet chilli sauce.
