Prawn mixture skewered on sugarcane sticks and shallow fried to perfection!PRAWNS ON SUGARCANE STICKIngredients20-25 medium prawns, cleaned and deveined6-8 sugarcane stick, 2 inch each1 tbsp finely chopped garlic1 tbsp finely chopped ginger1 medium onion, finely chopped½ tsp red chilli flakes1 tbsp chopped fresh coriander leaves½ tsp fish sauceSalt to taste¼ cup bread crumbsWhite sesame seeds for coating2-3 tbsps oilSweet chilli sauce to serveMethod1. Put the prawns in a blender jar. Blend to a fine paste and transfer it into a bowl. 2. Add garlic, ginger, onion, red chilli flakes, coriander leaves, fish sauce, salt and bread crumbs and mix well.3. Apply some water on your palms and take a portion of the prawns mixture and pat it on the sugarcane stick.4. Spread the sesame seeds on a plate. Roll the prawns mixture over it.5. Heat oil in a non-stick shallow pan. Place the prawns on stick and cook for 2-3 minutes on each side. Drain on an absorbent paper. 6.
