PRAWNS KOFTA PULAO Ingredients15-16 medium prawns1½ cups Daawat Pulav Basmati Rice4-5 garlic cloves1 medium onion, chopped2 tbsps chopped fresh coriander leaves 1-2 green chilliness, SlitSalt to taste 3/4 tsp turmeric powder1 egg1 ½ tbsps oil +deep-fry3-4 cloves2-3 green cardamom, ¾ tsp cumin seeds 6-7 black peppercorns2 medium onion, sliced1 tbsps ginger garlic green chilli pasteSalt to taste½ tsp red chilli powder, ¼ tsp turmeric powder A pinch of garam masalaRaita for serving Method1. Wash Daawat Pulav Basmati Rice with sufficient water for 2-3 times. Add fresh water and soak for 20 minutes and drain. 2. Put the prawns in a food processor; add garlic cloves, onion, coriander, green chillies, salt, and turmeric powder. Break egg and grind into a fine paste.3. Heat oil in a kadai, make small balls and deep-fry till golden brown and crisp. Drain on an absorbent paper.4. Heat oil in a non-stick pan, add 3-4 cloves,2-3 green cardamom, ¾ tsp cumin seeds , 6-7 black peppercorn. Let the cumin seeds change colour.5. Add onion, ginger garlic green chilli paste, mix and add salt and sauté for till onion are translucent.6. Add red chilli powder, turmeric powder, garam masala and mix.7. Add soaked Daawat Pulav Basmati Rice and gently mix, add fresh coriander leaves, mix and 2 cups hot water and adjust salt, mix, cover and cook for 4-5 minutes.8. Remove the lid and add the prepared kofta , cover and cook till rice is done.9. Remove the lid, mix and garnish with fresh coriander leaves and mix. 10.
