Marinated prawns lined up with olives on skewers grilled on pan in herb butter.

PRAWN SKEWERS

Ingredients

8-12 medium prawns, shelled and deveined with tails intact
Salt to taste
Crushed black peppercorns to taste
Juice of ½ lemon
8-12 black olives, pitted
Herb-chilli butter for brushing

Method

1. Take the prawns in a bowl. Add salt, crushed peppercorns and lemon juice, mix and set aside to marinate for 5-10 minutes.
2. Heat a non-stick grill pan.
3. Insert a marinated prawn alongwith a black olive onto skewers. Repeat the process till all the ingredients are used (3 on each skewer).
4. Place the skewers in the pan and grill till the prawns are evenly done from both sides and fully cooked, brushing with the herb-chilli butter.
5. Serve hot.

Preparation Time: 15-20 minutes
Cooking Time: 8-10 minutes
