PRAWN ROLL

Ingredients

1½ cups small prawns, shelled, deveined and boiled
4 hotdog rolls
½ cup mayonnaise
2 tablespoons finely chopped celery
Crushed black peppercorns to taste
Salt to taste
1 medium onion, thinly sliced
1 teaspoon Tabasco sauce
1-2 stalks spring onion greens, finely chopped
Butter for spreading
4 iceberg lettuce leaves
French fries for serving
Tomato ketchup for serving

Method

1. Take prawns in a bowl. Add mayonnaise, celery, crushed peppercorns, salt, onion and Tabasco sauce and mix. Add spring onion greens and mix well.
2. Slice hotdog rolls horizontally with one side intact and spread some butter on one side.
3. Put 1 iceberg lettuce leaves and some prawn mixture in each roll.
4. Serve with French fries and tomato ketchup.
