Prawn Cocktail | Sanjeev Kapoor Khazana

Cooked prawns mixed with avocado, cucumber in creamy mayonnaise dressing.

PRAWN COCKTAIL

Ingredients

8-10 medium prawns + 3-4 skewering shelled, deveined and boiled
¼ medium avocado
¼ cup mayonnaise
1-2 stalks spring onion greens, finely chopped
1 tablespoon tomato ketchup
1 teaspoon paprika
Salt to taste
1 tablespoon lemon juice
1 medium cucumber, peeled and cut into small cubes
10-12 cherry tomatoes
5-6 iceberg lettuce cups
6-7 baby spinach leaves
1 lemon

Method

1. Deseed, peel and cut the avocado flesh into small cubes.
2. Combine mayonnaise, spring onion greens, tomato ketchup, paprika, salt and lemon juice in another bowl and whisk well. Add prawns, cucumber and avocado cubes and mix well.
3. Halve 6-8 cherry tomatoes and add alongwith 3-4 torn iceberg lettuce and 3-4 baby spinach and mix well. Refrigerate for 20 minutes.
4. Cut lemon into wedges. Halve remaining cherry tomatoes.
5. Skewer halved cherry tomato, prawn and a lemon wedge into each toothpick.
6. Place remaining baby spinach and remaining iceberg lettuce on the bottom of individual martini glasses. Put some prawn mixture on it and place a prepared skewer.
7. Serve immediately.

Preparation Time: 25-30 minutes
Cooking Time: 5-8 minutes
