INGREDIENTS
1. Cooked Rice
2. Tamarind - 150 Grams
For Tempering
3. Ground Nuts - 3-4 Tablespoons
4. Bengal Gram - 2 Tablespoons
5. Black Gram - 2 Tablespoons
6. Mustard Seeds - 1 1/2 Teaspoon
7. Cumin Seeds - 1 1/2 Teaspoon
8. Dried Chillies - 7-8
9. Turmeric Powder - 1 Teaspoon
10. Green Chillies
11. Curry Leaves - 1/2 Cup
12. Chopped Ginger - 1 Teaspoon
13. Hing - A Pinch
14. A Small Piece Of Jaggery
15. Salt
For Masala
1. Pepper - 1/4 Teaspoon
2. Fenugreek Seeds - 1/4 Teaspoon
3. Cumin Seeds - 1/2 Teaspoon
4. Coriander Seeds - 1 Teaspoon
5. Sesame Seeds - 2 Teaspoons

The rice has to be cooked by adding a little less water than usual
Soak bengal gram in water, It will bulge up
wash and soak tamarind in water for 1/2 hour
This makes it easier to extract the pulp
It could be soaked in warm water if there is less time to soak
Extract the juice from the soaked tamarind
Make it as thick as possible
Simmer the tamarind pulp on the stove
Boil till the tamarind juice becomes thick
Add 2 teaspoons salt or salt to taste, a small jaggery piece, curry leaves and stir
Let it boil till it becomes thick
It will take 10-15 minutes for the tamarind to boil
Letís prepare masala in the mean time
Heat pan
Fry coriander seeds, cumin seeds, fenugreek seeds and pepper
Fry for some time and add sesame seeds
Move it into a different plate and let it cool down
Cool down the cooked rice by spreading it on a plate
Mix curry leaves in this rice
Adding curry leaves to the warm rice will give it a nice flavour
Tamarind paste is ready now
See that it has become as thick as possible
Cut off the stove
Letís prepare tempering now
Heat 3-4 tablespoons oil in pan
Add groundnuts and fry
After the groundnuts fry, add black gram
As it starts to change colour, add mustard seeds and cumin seeds
Add dried chillies and fry
As it starts to change colour, add chopped ginger.
This step is optional
Add green chillies and curry leaves
Add hing, 1 teaspoon turmeric powder and mix
Drain off the water and add soaked bengal gram
Fry for 1-2 minutes
Tempering is ready
Powder the previously fried masala ingredients
Masala powder is also ready
Since everything is ready, mix these one by one to the cooled rice
Letís add masala powder first
This gives a nice taste to the tamarind rice
Add salt
Add tamarind paste and mix
Add as much tamarind paste as required by mixing and adding it in small quantities
Add prepared tempering and mix
If the tamarind paste is leftover, store it in an air tight container and it could be used for up to 1 month
Tamarind rice is ready to serve
