The Mani region on the Peloponnese is not just distinguished for its amazing beaches, mild climate and impressive mountain hikes. Additionally, it produces delicious fruits and vegetables and artisanal, local products; not to mention its Olive oil and olives.
Hence, a huge variety of local dishes that I have explored and tasted during my many visits in the area and then posted to you.
This salad is no exception. Super nutritious, made with boiled potatoes and eggs, fresh Mani oranges full with juices, Kalamata Olives and Mani Syglino cured meat (optional).
To enhance its taste further, it's topped with the beloved, crunchy Lalagia (Greek fried dough strips).
A memorable salad that I am certain will delight you. So let's see how it is prepared.
Suitable for Ovo-vegetarians, if you don't add cured meat.

INGREDIENTS:
400 gr. / 14 oz / 3 medium Potatoes, boiled (skin on)
1 large Orange
2 large hard-boiled Eggs
1 medium, sweet Onion cut in rounds (or 2-3 fresh Spring Onions, finely chopped)
3-4 Lalagia, cut in pieces (fried dough strips)
10-12 Kalamata Olives
60 ml / 4 tbsp. Extra Virgin Olive Oil (from Mani)
20 ml / 1.5 tbsp. Balsamic Vinegar
1 tsp. dry or fresh Thyme (or mount "Taygetos" dry Oregano)
1/2 tsp. dry Mint
Optional: 30 gr. / 1 oz Syglino or Pasto Manis cured meat, finely chopped (altern: smoked ham, gammon, kassler)
Ground Salt and Pepper
