Potato curry with butter
Servings: 4

INGREDIENTS
Thinly sliced pork 250g
Onion 1
Potato 4
Carrot 1/2
Garlic 1
Vegetable oil
800ml water
Curry roux 100g
Ketchup 1tbsp
Worcester sauce 1tbsp
Consomme 1tsp
Butter 40g
Cooked Rice

PREPARATION
1. Heat oil and garlic in a pan. Add pork when garlic is soften. Once pork browned, add onion and carrot, then stir fry them all together.
2. When onion is soften, add water and stock cube. Skim off the scum and fat from soup when it's boiled. Simmer over low heat for 15 to 20 mins with a lid on.
3. Turn off the heat when vegetables are done, add curry roux, ketchup and worcester sauce and mix well.
4. After curry roux is melted, turn the heat back to low to simmer 10 more minutes.
5. Scrub potato well. Keep skin. Prick potato with a fork (or make a shallow
cross cut, so it doesn't explode and cooks evenly). Wrap a potato with a wet paper towel first then cling wrap, and microwave it on 600W for 5 to 6 mins.
6. Put steamed white rice on a plate, pour curry (4) over, and place the potato (5) with butter on top.
7. Enjoy!
