Servings: 2-3INGREDIENTS Dressing⅓ cup minced shallots⅓ cup olive oil1 tablespoon mustard1 tablespoon lemon juice1 teaspoon pepper1 teaspoon salt½ teaspoon lemon zestSalad 3 cups water1 cup wild rice2 cups arugula1 cup pomegranate seeds1/3 cup pine nuts1/4 cup feta cheesePREPARATION 1. Whisk dressing ingredients together in a small bowl, set aside until ready to use. 2. Bring 3 cups of water to a boil. Add wild rice and bring back to a boil. Cover and let simmer for 45 minutes. Once all of the water has been absorbed, fluff rice and transfer to large salad bowl. 3. Allow the rice to come to room temperature so it doesn’t wilt the rest of the salad ingredients. 4.
