Looks lovely, no?POI WITH EGGSIngredients4 pois8 eggs2 tbsps tbsp olive oil + for drizzling8 chicken sausagesSalt to taste1 cup milk15-16 cherry tomatoesCrushed black peppercorns to taste small bunch fresh coriander leaves2 tbsps butter1 cup grated mozzarella cheeseMethod1. Break the eggs in a bowl, add salt and milk, whisk well. 2. Heat olive oil in a nonstick grill pan.3. Cut the chicken sausages vertically, place them on the hot grill pan. Sprinkle salt, grill on both the sides for 1 minute on each side. 4. Cut the cherry tomatoes in half, sprinkle salt and crushed peppercorns. Drizzle some olive oil over it.5. Chop coriander leaves and add to the tomatoes. Mix till well combined. 6. Heat butter in a nonstick pan, add the egg mixture and grated cheese, cook for 1-2 minutes. Add crushed peppercorns and mix lightly. Cook for another minute.7. Cut the pois in half.8. Serve the scrambled eggs with pois, grilled sausages, and cherry tomatoes mixture.
