Poha | Breakfast with Chef Afraz | Sanjeev Kapoor Khazana

The perfect Indian breakfast recipe made using pressed rice. Extremely popular and well known in Indian households.

POHA

Ingredients

2 cups pressed rice (poha)
1½ tablespoons oil
2-3 tablespoons peanuts
1 teaspoon cumin seeds (jeera)
½ teaspoon mustard seeds
¼ teaspoon asafoetida (hing)
6-8 curry leaves
1 medium onion, finely chopped
1 medium potato, peeled
2 green chillies
Salt to taste
¼ teaspoon turmeric powder
1 teaspoon sugar
1 lemon
Scraped fresh coconut for garnishing
A fresh coriander sprig for garnishing

Method

1. Place a colander on a bowl. Put pressed rice, pour water on top, mix and set aside to soak for 5-10 minutes.
2. Heat oil in a non-stick pan. Add peanuts and fry till golden brown and crisp. Drain in a bowl.
3. Add cumin seeds to the same non-stick pan and when it changes colour, add mustard seeds and let it splutter. Add asafeotida and curry leaves and let the curry leaves crackle.
4. Add onion and sauté till translucent.
5. Chop potato and green chillies.
6. Add green chillies to sautéed onion and mix. Add chopped potato and mix. Add salt, turmeric powder, mix and cook for 1 minute.
7. Add 3-4 tablespoons water, mix, cover and cook till the potato is done.
8. Mix the soaked pressed rice to separate them, add to pan and lightly mix. Add sugar and salt, sprinkle some water, mix, cover and cook for 2-3 minutes.
9. Slice half of lemon.
10. Add ¾ of fried peanuts and lemon juice of remaining lemon to pressed rice mixture and mix well.
11. Serve hot garnished with remaining fried peanuts, coconut, lemon slice and a coriander sprig.
