This shikanji is flavoured with fresh plums and is absolutely refreshing and lip-smacking to treat your taste buds!

PLUM SHIKANJI

Ingredients

6 fresh plums
½ tsp black salt
1 tsp dried mint leaves
½ tsp red chilli powder
½ tsp dried mango powder
¼ tsp chaat masala
1 tsp roasted cumin powder
½ tsp dry ginger powder
½ cup sugar
1 tbsp lemon juice
1 lemon
Ice cubes as required
Mint sprigs as required
Drinking soda as required

Method

1. Put black salt in a mortar, add dried mint leaves, red chilli powder, dried mango powder, chaat masala, roasted cumin powder and dry ginger powder and crush with the help of a pestle.
2. Reserve 1 plum and deseed and chop the remaining ones.
3. Transfer the chopped plums in a nonstick pan. Add sugar, lemon juice and mix well.
4. Add ½ cup water and mix well. Cook on medium heat for 8-10 minutes.
5. Mash the plums with the back of the spoon. Transfer in a bowl and allow to cool.
6. Slice the lemon and remaining plum. Insert toothpick in the plum slices to make garnish.
7. Add ¼ tsp of spice mix in each glass and top up with plum mixture. Add ice cubes and lemon slices and mint sprigs.
8. Top it up with drinking soda and serve chilled garnished with sliced plums.
