Pistachio Coconut Cookies | Sanjeev Kapoor Khazana

These delicious emerald green pistachio cookies are the perfect accompaniment with your evening tea.

PISTACHIO COCONUT COOKIES - (Serves - 4)

Ingredients

2 cups powdered pistachios
½ cup desiccated coconut
¾ cup powdered sugar
1 egg white

Method

1. Preheat oven to 180° C. Line a baking tray with silicon mat.
2. Combine pistachio, powdered sugar and coconut in a bowl and mix. Add egg white and whisk well using an electric beater.
3. Divide the mixture into small equal portions, shape them into small cakes and place them on the lined baking tray. Refrigerate for 20-30 minutes.
4. Put the baking tray in preheated oven and bake for 15-20 minutes. Remove from oven and cool.
5. Serve.
