Ingredients for sugar syrup:
Sugar 1 cup
Water 3/4 cup
Lemon juice 1 ½ tbsp
Cinnamon stick 1
Ingredients for dough:
Flour 3 cups
Egg 1
Baking powder 1 ½ tsp
Salt a pinch
Oil 1/4 cup
Milk + water (1/2 cup milk + 1/4 cup water)
Ingredients for date filling:
Dates (deseed) 2 cups
Cinnamon powder 1 tsp
Almonds (chopped) 1/2 cup
Oil 2 tbsp
Assembling:
Butter (melted) as required
Flour 1 cup
Corn flour 2 tbsp
Chocolate syrup as required
Pistachios as required
Directions:
1. For dough in a bowl add flour, egg, baking powder, salt, oil and mix well. Gradually add water plus milk mixture and knead for 3 to 5 minutes. Cover and let it rest for 40 minutes.
2. In a pan add water, when it starts simmering add sugar, lemon juice, cinnamon stick and cook for 5 to 7 minutes. Take off from stove and let it cool on room temperature.
3. Now in a chopper add deseeded date, almonds, cinnamon powder and oil. Chop until all ingredients are well combined and a thick paste is formed. Your filling is ready set aside.
4. For flour mix in a bowl mix flour and corn flour. Your flour mix is ready set aside.
5. Take dough and knead again with your palm for 2 to 3 minutes. Divide it into four pieces, make ball of each part and divide each ball in further four parts and make balls.
6. Roll out each part into thin sheet, stack them and dust flour mix on each side.
7. Then further roll them out until a thin sheet form, cut it into square and then separate each sheet.
8. Take one sheet, brush it with butter thoroughly, add date mixer in center in tube shape and start rolling it out.
9. Before the sheet end, place another sheet on edge, brush it with butter and roll it till end.
10. Place these rolls in a baking tray; brush each roll again with butter. Bake in a preheated oven at 180 degrees for 25 to 30 minutes or until they are light golden brown.
11. Take out of oven, cut these rolls in your desired shape and drizzle sugar syrup on top. Rest for at least 30 minutes or overnight before serving.
12. Drizzle chocolate syrup on top and sprinkle pistachio. Your tasty baklava rolls are ready to serve.
