Pineapple Sheera | Tiffin Treats by Roopa Nabar | Sanjeev Kapoor Khazana

A sweet, melt in the mouth pineapple sheera studded with crunchy dry fruits and bits of juicy pineapple - if this isn't a tiffin treat we don’t know what is!

PINEAPPLE SHEERA

Ingredients

1 small pineapple, peeled, cored and chopped
1 cup ghee
1 cup semolina (rawa/suji)
A pinch of saffron strands
1 cup sugar
5-6 almonds, chopped
5-6 cashew nuts, chopped
Puris for serving

Method

1. Boil 2 cups water in a deep non-stick pan.
2. Heat ghee in another deep non-stick pan. Add semolina, mix and cook on medium heat till golden brown, stirring continuously.
3. Take saffron strands in a bowl. Add 1 tablespoon warm water and mix well.
4. Add the boiling water to the semolina mixture, cover and cook on medium heat till water evaporates.
5. Add ¾ of saffron water, sugar, pineapple, ¾ of almonds and ¾ of cashew nuts, mix, cover and cook on low heat for 5-6 minutes.
6. Garnish with remaining saffron strands, remaining cashew nuts and remaining almonds and serve hot with puris.
