Pineapple and Cottage Cheese Skewers with Roasted Green Tomato Salsa | Sanjeev Kapoor | Sanjeev Kapoor Khazana

Marinated cottage cheese, pineapple and bell pepper cubes lined up on skewers and grilled, served with roasted tomato salsa.

PINEAPPLE AND COTTAGE CHEESE SKEWERS WIT ROASTED GREEN TOMATO SALSA

Ingredients

1 large pineapple, peeled and cut into cubes
200 grams cottage cheese, cut into cubes
1 medium yellow bell pepper, cut into cubes
1 medium green bell pepper, cut into cubes
1 medium red bell pepper, cut into cubes
1 tablespoon chopped garlic
1½ teaspoons mustard paste
¾ cup chipotle in adobo sauce
1 tablespoon oil + for grilling
Salt to taste
A few fresh Iceberg lettuce leaves
Mixed bell pepper juliennes for garnishing
Green tomato salsa
4-5 green tomatoes
3-4fresh jalapenos
1-2 medium onions, halved with skin
15-20 garlic cloves with skin
1 tablespoon oil
Salt to taste

Method

1. To make green tomato salsa, preheat oven at 230ºC.
2. Place tomatoes, jalapenos, onion and garlic cloves on a baking tray. Drizzle oil and sprinkle some salt on top, put the tray in the preheated oven and roast for 30-35 minutes. Remove from oven and cool.
3. Discard the skin of onion and garlic and blend together with roasted tomatoes and jalapenos into a chunky salsa. Refrigerate to chill.
4. Insert the cubed pineapple, cottage cheese and peppers onto 8 inch skewers in your choice of manner. Repeat the procedure till all the ingredients are used.
5. To make marinade, combine garlic, mustard paste, chipotle in adobo sauce, 1 tablespoon oil and salt in a bowl and whisk well.
6. Brush the prepared skewers with the marinade.
7. Heat some oil in a non-stick grill pan. Place the skewers in it and grill till evenly done from all sides.
8. Tear lettuce leaves and place on a serving plate. Top them with pepper juliennes. Place the skewers on the side and serve immediately with the prepared green tomato salsa.

Preparation Time: 30-40 minutes
Cooking Time: 40-50 minutes
