A breakfast item popular in New Zealand as well as Australia. These miniature versions of pancakes were my favourite breakfast dish while I was in Australia and they taste truly amazing! #WorldCricEAT #AUSvNZ #CWC19PIKELETSIngredients1 cup self-rising flour1 tbsp castor sugar1 egg2 tbsps melted butter + for drizzling¾ cup milk2 tbsps butter, cut into small cubes to serveJam to serveHoney to serveMethod1. In a large bowl, sieve flour add castor sugar and whisk well.2. Make a well in the centre; break in an egg, melted butter and milk little by little, whisking continuously to form a smooth batter.3. Heat a non-stick tawa, drizzle a little melted butter and spread it evenly with tissue paper. 4. Pour 1 tbsp batter to make mini pancakes. Cook on medium heat for 1-2 minutes, flip and cook for 1-2 minutes. Take them off the heat.5. For serving, stack pikelets on top of each and place butter cube on top and drizzle honey.
