Piña Colada Overnight Wheat Berries | Julie Nolke | Tastemade

Julie shows us a protein packed, pineapple topped wheat berry breakfast that you can eat on-the-go and will kick up your energy at least 3 notches (just look at Julie dancing for proof).

INGREDIENTS

1 cup cooked wheat berries
1 14 oz can of coconut milk
1 14 oz can of pineapple or fresh pineapple
1 tbsp brown sugar
1 tsp vanilla
Pine nuts

RECIPE

Cook the wheat berries as directed on the packaging, approx 45 minutes.

In a food processor, puree the pineapple to break it up. Keep some chunky bits. Then in a large bowl combine all the ingredients and stir.

Ladle in a mason jar and top with some additional pineapple and a few pine nuts before screwing on the lid and letting sit over night for breakfast the next morning.
