Phirni | Gille Firdaus | Rice Pudding | फिरनी | गिले फिरदौस | | Atima's Kitchen

Gile-e-firdaus, means clay of heaven. Prepare and relish this heavenly dish.
100 gram Broken Basmati Rice
200 gram Sugar
1ltr Milk (full cream)
100 grams Mawa (Khoya) (Grated)
½ tsp. Green Cardamom Powder.
2-3 drops Rose Essence.
For Garnish.
Almond and Cashew nuts,
Cherries
Dry roast rice, wash and soak in water for an hour. Grate Mawa. Slice Almond and Cashew nuts, and glazed Cherry.
Dry roast Almond and Cashew nuts, and keep aside.
Heat milk in a pan, keep one cup milk aside. Drain the water from rice and add one cup milk and coarsely ground the rice in a mixer jar.
Add rice paste in boiling milk. Cook on low heat, stirring occasionally till the rice mixture becomes thick.
Now add Sugar and cook for few more minutes on low heat. Be careful that the rice should not stick or burn in the bottom of the pan.
When mixture becomes thick again, turn off the heat. Now add half of Mawa, Cardamom Powder, Rose Essence, and Dry fruits. Mix well
Garnish with dry fruits and Cherry. Refrigerate for few hours and serve cold.
