Phansachi Phirni Chef Anupa Khane Deewane Sanjeev Kapoor Khazana

Two of the coastal superstars, jackfruit and rice meet to make a simply delicious phirni.

PHANSACHI PHIRNI

Ingredients

cup finely chopped jackfruit (phanas)
1 liter milk
2-3 tbsps rice, soaked
4-5 tbsps sugar
tsp green cardamom powder
1 tbsp almond slivers
1 tbsp chopped pistachios

Method

1. Heat three-fourth of milk in a deep non-stick pan, cover and bring to boil.
2. Coarsely grind together drained rice and remaining milk, add to boiling milk and cook till the mixture reduces and thickens, stirring continuously.
3. Add sugar, mix and cook on medium heat for 1 minute. Add cardamom powder, almond slivers and pistachios, mix and cook for 1-2 minutes. Switch off heat, add jackfruit and mix well.
4. Pour the mixture into individual small earthen bowls and set aside till set.
5. Serve.
