Try out this recipe the next time when you have guests over and trust me, they will love it!PETHE KA HALWAIngredients500 grams ash gourd (petha), peeled and grated¼ cup + 2 tbsps ghee 2 cups milkA large pinch of saffron¾ cup sugar½ cup grated mawa 2 tbsps slivered pistachios2 tbsps slivered almonds2 tbsps slivered cashew nuts½ tsp green cardamom powder1 tsp rose waterSilver warq for garnishBlanched pistachios, peeled and slivered for garnishDried rose petals for garnishMethod1. Heat ¼ cup ghee in a non-stick pan. Add ash gourd and sauté for 3-4 minutes. Add milk, and saffron, mix and continue to cook for 8-10 minutes or till the ash gourd turns soft.2. Add sugar, mix and cook till the sugar melts and the mixture thickens while stirring occasionally. 3. Add mawa, pistachios, almonds, cashew nuts and green cardamom powder and mix well. Add remaining ghee and mix till well combined. Continue to cook for 4-5 minutes.4. Stir in the rose water and cook for a few minutes.5. Switch the heat off and transfer the halwa into a serving bowl. Garnish with silver warq, blanched pistachios, and dried rose petals. Serve warm or cold.
