Persian Chicken JOOJEH Kabobs

Here is how to make them - instructions are for 1lb of chicken. Double or triple as needed:

1.Lets start with the marinade. Grab a large bowl and add the juice of 1/2 large yellow onion or 1 medium while onion. To juice the onion, you can use a food processor. Just process the onion until its fully pured/liquid. Grab a large bowl, put a strainer on top, then pour the onion juice over it to separate the pulp from the juice.

2.To the strained juice add a couple pinches salt, pepper, 1 tbsp dried oregano, 1 tbsp garlic powder, 2.5 tbsp plain Greek yogurt, the juice of 1 large lemon, and 1/8 teaspoon of saffron diluted in 3-4 ice cubes or water.

3.Give the marinate a good mix, then add in your protein of choice. I added 1lb of boneless skinless chicken thighs, but you can use your favorite cut. Mix well, ensuring everything is coated, then cover and let marinate for 6 hours to overnight.

4.When youre ready to make them, skewer them up and grill on a charcoal grill, or if you dont have one, you can always use a cast iron, a gas grill, or even air fry them.

Using an inexpensive charcoal grill to grill these makes such a difference!

Top it up with some sumac, fresh herbs, and serve it up with more grilled veggies or base of choice (obviously rice would be amazing if you eat rice, but theyre just as good with veggies or even on their own).
