Pepperoni potato cake
Ingredients for marinara sauce:
Tomato (puree) 2 cups
Oil 2 tbsp
Garlic (chopped) 1 tbsp
Red chili flakes 1 tbsp
Basil (fresh) 1 tbsp
Salt to taste
Black pepper powder 1/2 tsp
Italian seasoning 1 tbsp
Ketchup 1/4 cup
Ingredients for mashed potatoes:
Potatoes 1/2 kg
Cheddar cheese 1 cup
Black pepper 1 tsp
Salt to taste
Milk 1/2 cup
Butter 2 tbsp
Assembling:
K&N’s Pepperoni 588g
Mozzarella cheese as required
Black olives (sliced) as required
Sweet corn as required
Green capsicum (sliced) as required
Red capsicum as required
Oregano for sprinkle
Directions:
1. In a pan of slightly salted water add potatoes and boil until fully tender.
2. Then add these boiled potatoes in a bowl and mash them well.
3. In a pan add butter, milk, cheese and mix it well until dissolved.
4. Then add black pepper, salt, mashed potatoes and mix it well.
5. Note: Make sure your potatoes are not very soft and mushy. Your mashed potatoes are ready. Set aside to let it cool.
6. Heat oil in a pan, add garlic and sauté it for a minute.
7. Then add tomato puree, chili flakes, salt, black pepper, Italian seasoning and ketchup.
8. Mix it well and cook on medium low flame for 15 to 20 minutes or until you reach your desired consistency.
9. Lastly add chopped basil leaves and give it a good mix. Your sauce is ready, set aside.
10. Prepare K&N’s pepperoni as per the instructions on the pack.
11. Take a round baking pan and grease it with oil.
12. Firstly spread a layer of mashed potatoes in bottom evenly and cover it with marinara sauce.
13. Cover it with prepared K&N’s pepperoni by overlapping one pepperoni on the other.
14. Add another layer of mashed potatoes on top and cover it again with marinara sauce evenly.
15. Cover with it mozzarella cheese, cut prepared K&N’s pepperoni in half and place on the edge of your pan making a border.
16. Top it with olives, corns, green capsicum, red capsicum and sprinkle oregano and red chili on top.
17. Preheat your oven and bake for 5 to 6 minutes at 180°C or until cheese melts.
18. Let it cool a bit, remove from pan and serve delicious pepperoni potato cake.
Preparation time: 10-15 minutes
Cooking time: 25-30 minutes
Serving: 3-4
