A combination of bell peppers and garlic tossed with long grain fluffy rice!

PEPPER GARLIC RICE

Ingredients

1 medium green capsicum, cut into small cubes
1 medium red capsicum, cut into small cubes
1 medium yellow capsicum, cut into small cubes
3-4 garlic cloves, sliced
1½ cups Basmati Rice
Salt to taste
1 tbsp oil
1 spring onion bulb, chopped
Crushed black peppercorns to taste
2 tsps soya sauce
1 tsp vinegar
1 stalk spring onion greens, chopped
Garnish
Fried garlic
Spring onion greens, diagonally sliced

Method

1. Take Basmati Rice in a bowl. Add water and set aside for 30-40 minutes. Drain the rice and set aside.
2. Heat sufficient water in a nonstick pan, add salt and rice, cook till ¾ done. Strain and set aside.
3. Heat oil in a non-stick pan, add spring onion bulb and garlic sauté for 2-3 minutes.
4. Add green capsicum, red capsicum, yellow capsicum and sauté for 1-2 minutes.
5. Add rice and mix well. Add salt, crushed pepper and soya sauce, mix well.
6. Add vinegar and chopped spring onion greens mix well.
7. Serve hot garnished with fried garlic and spring onion greens.
