PELMENI - Russian Ravioli

In this episode, I'd like to share with you, how to make PELMENI - Russian Ravioli from scratch. Using a roller pin and a cookie cutter making it easier to prepare and it is
so yummy! With a cream sauce or whatever your heart desires.

INGREDIENTS: (4 servings)


300 gr. (650 pound) ground meat
1 large onion
2 large eggs
3 cups flour
1/2 cup water
Salt, black pepper, paprika, olive oil

FOR THE SAUCE:
1 cup sour cream (200 ml.)
1/4 cup fresh dill

DIRECTIONS:

Whisk 2 eggs and 1/2 cup of water.
Add 1/2 tsp of salt and a pinch of freshly ground black pepper.
Add 1 cup flour and whisk. Add 1 more cup flour and continue whisking.
Add a 3rd cup flour and start kneading.
Knead for 2-3 minutes on a well floured work surface.
Cover with plastic wrap and refrigerate for 30 minutes.
For the filling, pour onion into a blender or food processor pulse several times and transfer to a bowl.
Add the ground meat, 1 tsp salt, a pinch of freshly ground black pepper and paprika.
Gently knead and refrigerate until needed.
For the cream sauce:
Mix sour cream and chopped dill in a bowl.
Add 1/2 tsp salt, freshly ground black pepper to taste and paprika (if desired) then set aside.
Lightly flour a parchment paper-lined baking sheet.
Dust your work surface with flour.
With a knife, divide dough into 4 pieces.
Work with one piece at a time, keeping the others covered with plastic wrap.
Coat the rolling pin with flour.
Push down the pin and roll forward to the edge until the dough is completely flat.
With a cookie cutter (or upside-down water glass) cut out circles in the dough.
Try to cut out as many as you can.
Place a tsp of the filling in middle of a dough.
Fold the dough in half over the filling, make a half-moon shape.
Pinch the edges together, seal with hand then pinch the corners together.
Transfer to prepared baking sheet and repeat process with remaning dough.
Reroll any trimmings and cut out.
I made 54 Pelmeni from this recipe.
Cover Pelmeni with a clean kitchen towel and chill until ready to cook.
To cook, bring a pot of water to boil.
When the water is boiling, add Salt&Pepper, olive oil.
Add Pelmeni (13-14 per portion) carefully, cover the pot and let the water return to a boil again.
Remove the lid and cook for about 20 more minutes.
Serve them hot in soup plates with the cream sauce or whatever your heart desires.
