Pear Shahi Tukda adds a flavorful twist to this Hyderabadi Dessert recipe. A royal treat to your taste buds, it is made by frying bread pieces in ghee, making a classic Indian Dessert.PEAR SHAHI TUKDAIngredients 1 medium green USA Pear 1½ cups milk 8 white bread slices 2½ tsps ghee 3 tbsps castor sugar + for sprinklingFew saffron strands Rose petals as requiredBlanched and sliced pistachios as required Silver warq for garnishingMethod 1. To prepare pear rabdi, heat milk in a deep non-stick pan and cook till reduced. 2. Cut bread slices into roundels using a large cookie cutter. 3. Heat 1 tsp ghee in a non-stick pan. Place the bread roundels and toast from both sides till golden brown. 4. Deseed and cut ½ of the USA Pear into roundels. Chop remaining pear and blend to a smooth puree. 5. Heat remaining ghee in the same non-stick pan. Place the pear roundels and roast from both sides till golden brown. 6. Add 3 tbsps castor sugar to reduced milk, mix and cook till it melts. Add pear puree, mix and cook for 1-2 minutes. Switch off heat and slightly cool.7. Sprinkle some castor sugar on top of roasted pear roundels, flip and cook till sugar melts and caramelizes. Repeat the process once again. 8. To prepare one shahi tukda, place one toasted bread roundel on a serving platter. Place 2 caramelized pear roundels and drizzle some pear rabdi on top. Place another toasted bread roundel, 3 caramelized pear roundels and drizzle some more pear rabdi on top. 9. Put some saffron strands, rose petals, pistachios and drizzle some more pear rabdi on top. 10. Serve immediately garnished with silver warq.
