Pear and Onion Quesadilla | Pear Pairings | Sanjeev Kapoor Khazana

Popular mexican recipe of quesadilla with unique stuffing of pear and onions.

PEAR AND ONION QUESADILLA

Ingredients

1 medium USA Pear
1 medium onion, sliced
12 whole wheat flour tortillas
1 tbsp olive oil + for basting
½ medium red capsicum
Salt to taste
1 tsp sugar
¾ tsp red chilli powder
1 tbsp balsamic vinegar
Grated processed cheese as required
Mozzarella cheese as required
Mixed micro greens for garnishing

Method

1. Heat 1 tbsp olive oil in a non-stick pan. Add onion.
2. Cut red capsicum into 1 inch slices and add to the pan.
3. Deseed and roughly chop USA Pear. Add to pan and toss. Add salt, sugar and chilli powder, toss and sauté for 2-3 minutes.
4. Warm tortillas on a non-stick tawa.
5. Add balsamic vinegar to sautéed onion mixture and mix well.
6. To make one portion, place a warm tortilla on the hot tawa. Spread some pear mixture, top with processed cheese and place some mozzarella cheese pieces on top. Cover with another tortilla.
7. Again layer with some pear mixture, processed cheese and mozzarella cheese pieces and cover with another tortilla. Cook from both sides till golden brown and slightly crisp, basting with some olive oil.
8. Cut into pieces and serve hot garnished with some micro greens.
