This exciting fusion of the desi pav bhaji with the Mexican quesdillas, you're going to love this one!

PAV BHAJI QUESADILLAS

Ingredients

200 grams raw banana, boiled, peeled and grated
1 medium capsicum, finely chopped
8-10 French beans, finely chopped
¼ cup boiled green peas
¼ cup grated processed cheese + for sprinkling
8 ready-made rotis
1 tsp oil
2½ tsps ghee + for drizzling + for brushing
1 tsp cumin seeds
Salt to taste
1 large tomato, finely chopped
½ tsp turmeric powder
1 tsp red chilli powder
½ tsp garam masala powder
2 tsps Tata Sampann Pav Bhaji Masala
3 tbsps chopped fresh coriander leaves
2 tsps lemon juice
Jain salsa to serve

Method

1. Heat oil and 1½ tsps ghee in a non-stick wok, add cumin seeds and let them change colour.
2. Add capsicum and mix well. Add French beans and sauté till well combined. Add salt and mix well, cook for 1-2 minutes.
3. Add tomato, green peas and raw banana and mix till well combined.
4. Add turmeric powder, red chilli powder, garam masala powder and Tata Sampann Pav Bhaji Masala. Adjust salt and mix well, cook for 2-3 minutes.
5. Add remaining ghee, 2 tbsps chopped coriander and lemon juice and mix well. Cover and cook for 2-3 minutes.
6. Add remaining chopped coriander and mix well and add cheese and take the pan off the heat. Allow the mixture to cool slightly.
7. To make the quesadillas, place a roti on a worktop, spread a portion of the prepared mixture and sprinkle cheese on top and place another roti on top.
8. Heat a non-stick grill pan, place the quesadilla on it and drizzle ghee on the sides and brush ghee on top, cook till grill marks appear on both sides.
9. Cut in half and serve hot with jain salsa.
