PAV BHAJI PIZZA

Ingredients

8 pavs
3 tbsps butter
1 tsp cumin seeds
1 medium onion, chopped
1 large tomato, chopped
Salt to taste
1 tbsp red chilli-garlic paste
1½ tbsps pav bhaji masala powder
½ tsp red chilli powder
1 large potato, boiled, peeled and mashed
2 tbsps freshly chopped coriander leaves
10-15 small cauliflower florets, blanched in turmeric water
1 small capsicum, chopped
¼ cup green peas
Grated mozzarella cheese as required
Dried red chilli flakes for sprinkling
Dried oregano for sprinkling

Method

1. Preheat the oven at 180˚C.
2. Heat 2 tbsps butter in a non-stick pan, let it melt. Add ½ tsp cumin seeds and let the seeds change colour.
3. Add chopped onion and sauté till golden brown. Add tomato, salt, mix well and cook till pulpy.
4. Add red chilli-garlic paste, pav bhaji masala powder, red chilli powder, and mix well.
5. Add potato and mix well. Add ½ cup water and mix well. Add chopped coriander and mix well. Cook for 1 minute and take it off the heat.
6. Heat remaining butter in another non-stick pan, add remaining cumin seeds and let the seeds change colour.
7. Add small cauliflower florets, capsicum, green peas, salt and sauté well. Cook for 1 minute and take it off the heat.
8. Slit the pav in half and roll each side to flatten. Apply a little prepared bhaji on it and spread it evenly.
9. Add a portion of the prepared vegetables on top of each pav slice and sprinkle grated cheese in it.
10. Place the prepared pizza on a baking tray and bake for 5 minutes or till the cheese melts.
11. Sprinkle dried red chilli flakes and dried oregano. Serve hot.
