Pav Bhaji Cheese Balls | Sanjeev Kapoor Khazana

Delicious pav bhaji mixture shaped into balls, stuffed with cheese cubes and deep fried.

PAV BHAJI CHEESE BALLS

Ingredients

2-3 medium potatoes, boiled, peeled and mashed
½ cup grated cauliflower
½ cup grated carrots
¼ cup green peas, boiled and crushed
1 medium green capsicum, finely chopped
200 grams mozzarella cheese, cut into cubes
2 tablespoons oil + for deep-frying
2 medium onions, finely chopped
1 tablespoon ginger-garlic paste
1-2 green chillies, finely chopped
1 large tomato, finely chopped
1 tablespoon red chilli paste
Salt to taste
1½ tablespoons pav bhaji masala
½ tablespoon lemon juice
Dried white breadcrumbs for coating
Refined flour (maida) slurry as required

Method

1. Heat 2 tablespoons oil in a non-stick pan. Add onions and sauté well. Add ginger-garlic paste and green chillies and sauté for a minute.
2. Add tomato, mix and cook till it turns soft and pulpy. Add chilli paste and mix well.
3. Add cauliflower and carrots, mix well and cook for a minute.
4. Add green peas, capsicum, salt, pav bhaji masala and mix well. Add some water, mix and mash and cook till the moisture evaporates. Remove from heat, add lemon juice, mix and set aside to cool.
5. Mix together potatoes and cooked vegetable mixture in a bowl.
6. Spread breadcrumbs on a plate.
7. Divide the prepared mixture into equal portions, stuff with a cheese cube and shape into balls.
8. Dip the balls in the slurry, coat with the breadcrumbs and freeze for 15-20 minutes.
9. Heat sufficient oil in a kadai. Deep-fry the prepared cheese balls till golden brown. Drain on absorbent paper.
10. Serve hot with tomato ketchup.
