Preparation Time: 10 minutes. Cooking Time: 25 minutes. Makes 15 parathas. 1 cup finely chopped spinach (palak)¼ cup grated carrot1½ cups whole wheat flour (gehun ka atta)¼ cup besan (Bengal gram flour)4 tbsp curds (dahi)2 tsp green chilli paste1 tsp oilSalt to tasteWhole wheat flour (gehun ka atta) for rolling3¾ tsp oil for cookingFor servingFresh curds (dahi)1. Combine all the ingredients in a bowl and knead into a semi-soft dough using enough water. 2. Divide the dough into 15 equal portions. 3. Roll out each portion into a 100 mm. (4”) diameter circle using a little wheat flour for rolling.4. Fold into half to make a semi-circle and again fold into half to make a 100 mm. (4”) length triangular paratha. 5. Heat a non-stick tava (griddle) and cook it, using ¼ tsp of oil, till brown spots appear on both the sides.6. Repeat steps 3 to 5 to make 14 more parathas. Serve hot with fresh curds.
