Patiala Seekh | Sanjeev Kapoor Khazana

Minced chicken mixture layered in satay sticks and cooked in grill pan to make these delicious kababs.

PATIALA SEEKH

Ingredients

400 grams minced chicken (keema)
¼ cup browned onions
15 garlic cloves, chopped
1½ inch ginger piece, chopped
4 green chillies, finely chopped
1 small onion, sliced
¼ cup chopped fresh coriander leaves
2 tablespoons coarsely powdered cashewnuts
½ tablespoon crushed black peppercorns
Salt to taste
½ tablespoon coriander powder
½ tablespoon red chilli powder
½ tablespoon Khazana garam masala powder
½ egg, whisked
12 almonds, chopped
2 tablespoons butter
1 tablespoon roasted chana powder
Oil for grilling
To serve
Green chutney, as required

Method

1. Mince together the minced chicken, browned onions, garlic, ginger, green chillies, onion, coriander leaves, cashewnuts, peppercorns, salt, coriander powder, red chilli powder, garam masala powder, egg, almonds and butter in a mincer till smooth.
2. Transfer into a bowl, add the roasted chana powder and mix well.
3. Divide into eight equal portions and pat each portion onto a skewer to make seekhs.
4. Heat oil in a non-stick grill pan, place the seekhs over it and cook till grill marks appear on both the sides.
5. Serve hot with green chutney.
