Enjoy a bowl of this piping hot white sauce cheesy pasta along with some crunchy garlic bread on a rainy evening!

PASTA IN WHITE SAUCE

Ingredients

3 cups penne pasta, boiled
2 cups milk
1 layer of onion wedge
1 bay leaf
1 clove
2 tbsps butter
2 tbsps refined flour (maida)
Salt to taste
¼ tsp white pepper powder
30 grams processed cheese
A pinch of nutmeg powder
2 tbsps olive oil + for drizzling
1 tsp chopped garlic
½ small yellow squash, cut into triangles
10-12 broccoli florets, blanched
4-5 cherry tomatoes, halved
Crushed black peppercorns to taste
¼ tsp dried red chilli flakes
2 fresh thyme sprigs
1 fresh oregano sprig
Fresh parsley sprig for garnish
Pesto toast for garnish

Method

1. Add milk in a non-stick sauce pan, stud onion wedge and bay leaf with clove and add into the milk. Let the mixture come to a boil, take the pan off the heat and set aside.
2. Heat butter in a wide-deep pan, add refined flour and mix for 1 minute. Add the prepared milk and mix till well combined. Cook till the mixture thickens.
3. Add salt, white pepper powder and mix well. Grate processed cheese into the pan and mix well. Cook till the cheese melts.
4. Add nutmeg powder and mix well. Take the pan off the heat.
5. For the sauce, heat olive oil in non-stick shallow pan. Add chopped garlic and sauté for 30 seconds.
6. Add yellow squash, broccoli, cherry tomatoes, and sauté well.
7. Add penne paste and toss well. Add salt, crushed black peppercorns, and mix well.
8. Add the prepared sauce, dried red chilli flakes, thyme and oregano and toss well. Take the pan off the heat.
9. Transfer the prepared paste on a serving plate, garnish with parsley sprig, drizzle a little olive oil and serve hot with pesto toast.
