Method of preparation

• Take 1/2 a kg rice flour in a mixing bowl and keep it aside.

• In a mixie jar, add 1 medium-sized diced onion, 5-6 green chillies, 1/2 a tsp of cumin seeds, a handful of coriander leaves, 5-6 garlic cloves. Grind them into a fine paste.

• To the rice flour, add 1/2 a tsp of carom seeds, 2 tsps of sesame seeds, 2 tbsps of chana dal (soaked for an hour), 2 tbsps of green dal (soaked for an hour), 2 tbsps of sabudana, 2 tbsps of finely chopped curry leaves and mint leaves each. You can also add 2 tbsps of spring onions (Adding it is optional).

• Add the ground paste from the mixer grinder to this bowl. Mix the ingredients well.

• Add 1.5 tsp salt, 2 tbsps of hot ghee/oil and give the mixture a light mix.

• Add 1 cup hot water to the mixture and give it a light mix again.

• Now knead the mixture with your hand to form a smooth dough and make lemon-sized balls out of the dough.

• If you have a poori press machine, take two pieces of butter paper and apply oil on them. Place a dough ball between the butter paper and place it in the poori press machine. Then press the ball to form a thin poori.

• Let the pooris rest on a cotton cloth for a while.

• If you don't wish to use a poori press machine, you can apply some oil on a piece of butter paper and gently pat the dough balls on it to form thin pooris.

• You can also pat the dough balls directly on a cotton cloth. Grease your hands with oil/water before patting the dough balls.

• Heat Gold Drop Refined Sunflower Oil in a pan for deep frying the pooris. Make sure the oil is hot enough to fry the pooris.

• Fry the pooris on a medium flame in batches. Flip the pooris to fry them on the other side.

• Fry them until light brown and crisp. Try this recipe and relish it with your loved ones.
