A favourite to the vegetarians, here's the recipe for you to make it in your home kitchen.PANEER TIKKAIngredients300 grams cottage cheese (paneer), cut into 2 inch cubes¾ cup thick yogurt1½ tbsps ginger-garlic paste 1½ tbsps red chilli paste Salt to taste2 tsps Punjabi garam masala powder¾ tsp black salt¾ tsp chaat masala + for sprinkling1½ tbsps roasted Bengal gram (chana dal) flour¼ tsp dry fenugreek leaves (kasuri methi) powder2 tbsps mustard oil2 tsps red chilli powder1 small green capsicum, cut into 1 inch dices1 small red capsicum, cut into 1 inch dices1 small onion, cut into 1 inch dices and layers separated2 tsps butter1 tsp oilMint leaves to serveSirka pyaz to serveLemon wedges to serve Green chutney to serveMethod1. Take yogurt in a large bowl, add ginger-garlic paste, red chilli paste, salt, Punjabi garam masala powder, black salt, chaat masala, roasted Bengal gram flour, dry fenugreek leaves powder, mustard oil and red chilli powder and mix well. 2. Add cottage cheese, mix and set aside to marinate for 40-45 minutes. 3. Alternatively skewer green capsicum on to a satay stick along with 2 pieces of cottage cheese, red capsicum, onion, 2 pieces of cottage cheese and green capsicum. Repeat till the entire mixture is over.4. Heat butter and oil in a non-stick grill pan, place the skewers on it, grill for 2-3 minutes or till grill marks appear on all sides.5. Arrange the skewers on a plate, sprinkle chaat masala and serve hot with mint leaves, sirka pyaz, lemon wedhes and green chutney.
